Crayères Vineyard Cabernet Franc Shiraz

Terre à Terre Crayères Vineyard Cabernet Franc Shiraz draws from the unique, close spaced Crayères Vineyard perched atop a limestone ridge in Wrattonbully, South Australia.
Each variety is hand harvested separately. They are then transported to the winery in the Adelaide Hills' Piccadilly Valley, where the grapes are crushed and destemmed.
Keeping the varieties separate, the juice ferments in a mix of large potter fermenters and smaller open fermenters. It undergoes maceration on skins before being pressed for malolactic fermentation in tank.
First the wine matures in French oak barrels, then it is racked to large old oak vats to age further. It is lightly fined prior to blending and bottling without filtration.
Deep inky red, Terre à Terre Crayères Vineyard Cabernet Franc Shiraz has a ripe blackberry core with structured tannins on the finish. Cellaring potential is 10 years.
